- 60ml Honey it’s Thyme Vermouth
- 30ml Lemon Juice
- 20ml Honey Syrup or Sugar Syrup ( both 1:1 honey/sugar & boiling water)
- In a tall glass add the gin, lemon juice, and honey syrup to a Collins glass.
- Fill with ice, top with soda water, and stir.
- Garnish with a fresh Thyme sprig & enjoy.
