Ingredients

Cocktail:

  • 45ml Juno Autumn 2025 Gin
  • 30ml Fresh Lemon Juice
  • 15ml Sugar Syrup (1:1 ratio of boiling water and sugar)

Meringue:

  • 1 Egg White (fresh)
  • 10ml Sugar Syrup
Method

Meringue Preparation:

  • In a cocktail shaker, add the egg white & sugar syrup.
  • Add the spring from a Hawthorne strainer to the shaker.
  • Shake vigorously until the mixture becomes smooth and fluffy, resembling a meringue consistency.
  • Remove the spring & set the meringue aside.

Cocktail Preparation:

  • In a separate shaker, add the Juno Autumn 2025 Gin, fresh lemon juice, & sugar syrup.
  • Add ice & shake.
  • Strain the cocktail into a rocks glass filled with fresh ice.

Meringue Topping:

  • Spoon or pipe the meringue over the top of the cocktail.
  • If you have a kitchen blowtorch, lightly toast the meringue for a golden finish.
