Ingredients
Cocktail:
- 45ml Juno Autumn 2025 Gin
- 30ml Fresh Lemon Juice
- 15ml Sugar Syrup (1:1 ratio of boiling water and sugar)
Meringue:
- 1 Egg White (fresh)
- 10ml Sugar Syrup
Method
Meringue Preparation:
- In a cocktail shaker, add the egg white & sugar syrup.
- Add the spring from a Hawthorne strainer to the shaker.
- Shake vigorously until the mixture becomes smooth and fluffy, resembling a meringue consistency.
- Remove the spring & set the meringue aside.
Cocktail Preparation:
- In a separate shaker, add the Juno Autumn 2025 Gin, fresh lemon juice, & sugar syrup.
- Add ice & shake.
- Strain the cocktail into a rocks glass filled with fresh ice.
Meringue Topping:
- Spoon or pipe the meringue over the top of the cocktail.
- If you have a kitchen blowtorch, lightly toast the meringue for a golden finish.
