As the rain sweeps in and the mornings turn darker, the pull of a tropical island feels stronger than ever. This year’s Winter Seasonal Gin captures that longing for warmth and escape, with a distinctly Juno twist.
At the heart of this release are Tahitian limes, bright and juicy, from what’s been a bumper lime season right here in Taranaki (our distillery trees grew limes as big as grapefruits!). To balance that citrus zing, we’ve layered in plump olives and olive leaf, adding a soft saltiness and depth that’s both grounding and addictive.
While we considered adding rock salt during distillation, it was the olives that truly brought this gin to life, rounding out the citrus with richness, warmth, and complexity.
And as always, this gin is a true London Dry. Meaning nothing is added after distillation except pure water. No shortcuts, no flavourings. Just seasonal botanicals and pure distillation craft.
The result is a gin that’s bright yet bold, rich yet refreshing. A drinkable island daydream in the heart of winter.

Judy Stokes is a creative photographer living on a wild clifftop in Northland, NZ.
To capture the emotion of a scene she often uses the technique of intentional camera movement to create her images. She loves the way this free style of imagery simplifies scenes and creates mood.
